Making my first Levain starter
Do I Turn 3 times in the first hour of making it and again when I use it?
After waiting 6-8 hours for it to be “ready” can I store it for a day before using? How long can I store it and in fridge? Or not?. Trying to follow book but just couldn’t

One response to “starters

  1. You use a starter to make the levain. A levain is a wet batterlike dough that you mix prior to mixing the final bread dough.
The turning instructions on page 15 are not part of the levain instructions-this is for when you are making the bread dough, not the levain.
You can store a levain in the refrigerator for up to 24 hours before baking.
